The other day I had the pleasure of making some cupcakes for a surprise baby shower. They were mini vanilla cupcakes with blue buttercream icing. These cupcakes were harder than usual to make since I am still on my vegan journey. It was hard to resist the temptation to taste both the icing and batter while making these cupcakes. I had to rely on my usual measurements and trust my past recipes. Now I have made vanilla cupcakes before just not mini versions and I usually try to adjust my recipes so that the moisture content of the cupcakes are perfect. The cupcakes are pictured below. I was pretty satisfied with the turn out of the color of the icing and I was told that the texture and moistness of the cake was very good.
Maybe next time I'll get asked to do a baby shower cake and I can decorate more.
