Meal Prep:: Week of 3/2/15

Hi Beauties!

Did you meal prep this week?? I am back with another week of prepped food, slight variation from last week. As you can tell, I am a bit of a creature of habit. As it relates to food I tend to stick with things I like (because I am soooooo picky) until I get tired of it and then I switch it up lol. Since I have some of the same dishes from the last two weeks I won't go into too much detail. Here we go!


Mid Morning Snack:

This week I used half (2) of the Sweet Basil Pesto Smoked Chicken & Turkey Sausage and half (2) of the Smoked, Apply Chardonnay Chicken Sausages from Trader Joe's. I thought the Apple sausage would pair well with the bacon flavor (doesn't that sound all Food Network-y?!) Otherwise same preparation as last week.




I also made egg white muffins again this week to go along with my sausage. Same ole' prep and ingredients.



Afternoon Snack:

Again, Trader Joe's Chickenless Chicken Tenders, prepared the same as always.

And still have the "Boom Chicka Pop" Sea Salt Popcorn snack packs from last week (check this post for deets), which are pretty tasty in case you were wondering.


Dinner:

I opted for chicken legs this week (mainly because I purchased a bunch of Nature's Promise chicken/turkey a couple weeks ago on sale --that I put in the freezer-- and I didn't feel like going to the grocery store, straight like dat).


I came across this seasoning blend at Burlington last week (I keep telling ya'll, troll Marshalls/Ross/Tj Maxx/Burlington home/kitchen sections, they always have great things which are usually at better prices) which sounded yummy, so I used it to season my chicken.



I took the skin off the legs, cleaned them (vinegar/lime juice then salt water), and seasoned with the rosemary garlic blend, fresh garlic, cilantro, jerk seasoning, and a capful of white rum. Yep. Rum. I didn't want to add much because I really wanted that seasoning blend to be the dominant flavor. I put it in the fridge and let marinate for a few hours. It smelled amazing.





I was a bit disappointed with the flavor. Didn't taste anywhere near as flavorful as it smelled if that makes sense. So I will try using the seasoning again next week in a different way in hopes of better results.




I bought fresh broccoli heads this week, which I just washed and cut and added to a pan with some coconut oil and fresh garlic. I added a little seasoning then when they were almost cooked added my onions and peppers and removed from the heat (so they retain some crunch and lose any bitter/raw flavor).
