Meal Prep:: Week of 3/9

Hi Beauties!!

Did you meal prep this week?? I am back with another week of prepped food, slight variation from last week. Here we go!


Mid Morning Snack:

This week I used half (2) of the Sweet Basil Pesto Smoked Chicken & Turkey Sausage and half (2) of the Smoked, Apply Chardonnay Chicken Sausages from Trader Joe's (again). Same preparation as the last few weeks.




Also made egg white muffins this week..and they came out the oven on time!!! Yay! I used the whites of 8 eggs to make exactly 5 muffins.





Afternoon Snack:


Again, Trader Joe's Chickenless Chicken Tenders, prepared with a sprinkle of Old Bay for some added flavor, because I don't eat ketchup or honey mustard or any of them condiments ya'll like to dip chicken in lol.


Dinner:

I was feeling a bit lazy and pressed for time this weekend so I made a chicken stir fry with two packs of Nature's Promise chicken tenderloins that were on sale a few weeks ago. I cleaned them and seasoned with fresh garlic, fresh cilantro, paprika, asian 5 spice, jerk seasoning, terriyaki marinade, and that rosemary spice blend again (trying to figure out how to use it so the flavor stands out). I rubbed that chicken up good then put it in the fridge for a few hours.








Ya'll, this Simply Asia Sweet Ginger Garlic seasoning (and their 5 spice) are two of my FAV blended seasonings!!! I literally use them in everything lol. I picked up this Kikkoman Teriyaki Triple Ginger  sauce at Giant last Friday thinking those ginger flavors would play nicely off of each other--it smells so good!




In a hot pan I added about a tablespoon of coconut oil and a tablespoon of fresh garlic and let that melt/brown. Then I added that seasoned chicken from earlier. Once that was pretty much cooked I took some fresh broccoli crowns (which i chopped into bitesized pieces) and added along with a pack of frozen cauliflower and half a pack of frozen carrots.


Fresh/Raw Broccoli Crowns

You could really add whatever veggies you want and as little or as much as you like. But you know, I am picky, so I stick to what I like lol. I usually use all frozen veggies but a couple weeks ago I had the random urge to try out fresh broccoli (I have no idea why), and I must say I'm really loving it. Some veggies I don't like raw because they have a sort of grassy taste so I'm normally a bit hesitant about it but I prefer using fresh broccoli because once it's cooked it still has a little bite/crunch to it vs that soft/mushy texture you get from cooking frozen broccoli. So if you like a little crunch, give fresh broccoli crowns a try! And side note, anybody else hate the stems of broccoli as much as I do?? I literally ONLY buy florets!!! It is real!

Triple Ginger Chicken Stir Fry

I added some of that triple ginger teriyaki sauce, then right at the end I add all my peppers and onions, then turn the fire off after about 2 minutes (so the peppers and onions still have some crunch). And that's it. I don't usually use salt or pepper while cooking (aside from egg whites and a few other things), and I don't really think it is necessary. so all the flavor is from herbs and spices. Really simple and quick dish to make.

  1. This looks so yummy! Where did you find the Simply Asia seasoning? I'll have to try this. I did a little Sunday prep. I made grilled chicken with spinach wraps.

  2. thanks! ill have to ask my mother where she got them from but I think Giant. they are the bomb! MMMmmm spinach wraps!!
