Fierce Fit Foodie Feature:: Meet Fierce Foodie Victoria

Hey Beauties!!!

We're excited to announce our very first Fierce Fit Foodie Feature!!!

FFF: Introduce Yourself!

V: Hello everyone! My name is Victoria, but you can call me Vic or Deli. I am so excited to be featured by Fierce.Fit.Foodie! I'm a country girl living in the DMV. I'm on a journey to expanding my creative space, and I hope that I can inspire you in some way.

Fiereness!!

FFF: How would you describe your sense of style?

V: Casual, but edgy chic

FFF: Discuss how you put together an outfit

V: I usually pick out one piece first like shoes or a top then work around that.

FFF: What are your 3 favorite items of clothing?

V: bags, shoes, dresses

FFF: What are your favorite places to shop?

V: H&M, Zara and Target

FFF: Are there any style trends or pieces you are excited to try?

V: I'm loving the fringe trend and I'm also excited to mix my new sneakers with a couple of dressy outfits. Sporty chic.

Hair Care

FFF: How would you describe your hair?

V: Diverse and versatile. It's very thick and curly with blonde highlights. I change my hair so much it's never the same style for too long.

FFF: What has been your biggest hair struggle? How did you overcome it?

V: My biggest hair struggle was the growth stage after the big chop. I hated doing my own hair so I really had to discipline myself to twist my hair, condition it, try different styles, etc. I was used to going to the salon so it was a big change for me.  But I saved a lot of money lol.  I tried new products, watched youtube videos, read natural hair blogs, and came up with own hair regimen.

FFF: Describe your styling/care routine

V: Lately I have been getting roller sets and wearing my hair straight but when I do wear my hair curly I normally do a wash and go or a twist out.

FFF: What is your go to hairstyle?

V: When I don't feel like doing my hair I'll put it in a bun or if im wearing it curly i'll just do a wash and go.

FFF: What are your hair goals?

V: Lately I've just been focused on length retention. So I get my hair trimmed every few months and I make sure I don't use too much heat.

FFF: What are your favorite products currently?

V: Shea Moisture Raw Shea Butter Restorative Conditioner and Carol's Daughter Monoi Oil

Beauty

FFF: What is your beauty routine?

V: Most days I don't wear makeup to work. I like to give my skin a break. I usually only wear makeup when I go out. I put on blush, eyeliner, mascara, and lipstick.

FFF: Who inspires your looks?

V: I get inspiration from everywhere. I really enjoy the Tiny Closet blog (www.thetinycloset.com), she wears minimal makeup and her skin is simply gorgeous. I love the natural look.

FFF: What item can't you live without?

V: I have to have lipstick! Yes I'm one of those girls that will wear lipstick to the grocery store. I think I get that from my Aunt Rosie. She won't let me take a picture of her until she "paints her lips." Every girl should have a tube of lipstick in her purse at all times. You never know who you might run into. ;)

FFF: What are your favorite products currently?

V: Too Faced Shadow Insurance Anti-Crease Eye Shadow Primer: My eyeliner usually smudges onto my eylid creases. This primer has really helped with that.

MAC Matte No Fax Pas Lipstick. As if I needed another matte Fuschia lipstick...but I just really love this color! And it is a great color for any season.

Biore Warming Anti-Blackhead Cleanser makes my skin feel so clean and refreshed.

Foodie

FFF: How do you classify your food expertise? (chef, restauranteur, foodie, etc)

V: I'm a Foodie-wanna-be chef

FFF: What is your favorite thing to eat?

V: This is a hard question! I can't choose one thing. I love steak and seafood.  My favorite soul food dishes are greens and mac and cheese. You have to try my mac and cheese. It's so good.

FFF: What is your favorite thing to make/create?

V: Sweet potato casserole and broiled lamb chops.

FFF: Who/what is your foodspiration?

V: Growing up I loved watching my mom bake and licking the bowl when she was finished. I hope that one day my cakes and pies turn out as good as hers. I don't do a lot of baking but my sweet potato pie is pretty good.

FFF: What is your guilty pleasure food?

V: I love to each chocolate ice cream with sour cream and potato chips. I get a mix of sweet and salty.

Inspiration

FFF: Who do you admire?

V: I admire my friends. They are all amazing! Enterpreneurs, writers, producers, managers...you name it. I admire their courage and resilience.

FFF: What tips do you have for the readers?

V: Be yourself! You are beautiful and unique. Don't be afraid to share who you are with the world.

FFF: How can the readers get in contact with you? (blogs, websites, social media)

My Journey through New Orleans -pt 1

A couple of weekends ago I went to New Orleans for some pre-lent fun.  So it was actually a weekend earlier than Mardi Gras but there were still Mardi Gras festivities.  We stayed at the Sheraton New Orleans which was on the edge of the french quarter.

view from the 32nd floor of the hotel
Now before I went to New Orleans, I searched on yelp and groupon almost everyday to find the best food and activity options.  My main goal of my trip to New Orleans was to get all of my gluttony out before lent started.  Additionally, I adore New Orleans culture and have always wanted to go  especially after my new favorite show (The Originals) was based on the area.

*Pause* for a moment to swoon over  Joseph Morgan and imagine him saying sweet nothings in my ear ending in "-- my love" in that accent of his!

Ok I'm back!  So my main food goals while in New Orleans were the following: beignets, crawfish, gumbo, jambalaya, bread pudding, and oysters!  Anything outside of this list that I found tasty would just be a plus.

french onion soup
shrimp and grits
mahi mahi
dreamy weenies hot dog
house special (cream cheese, chilli, shredded cheese, pico de gallo, and creole mix)
fried crawfish tails

beignets

rum punch
jerk chicken and bbq brisket nachos
fried and blackened gator
catfish platter
Taste of New Orleans
(gumbo, jambalaya, and red beans and rice)
hurricane
garlic butter crab claws
catfish po boy
boudin ball
butter pecan ice cream (goes with the bread pudding)
bread pudding with whiskey sauce (good but I can make better)

I ate soooo much native food of new orleans that I literally was sick of it by sunday night.  All I wanted was a burger, which I ended up getting from fuddruckers.  I had sooo much seafood and fried foods that I just felt like my body was sick of it.  I will say that I loved my time down there but I definitely can't spend more than 3-4 days at time.

Week of 2/16 Meal Prep

Hi Beauties!!

If you follow me on IG (@kingteeuhh), you already know I am an avid meal prepper. Most of that is due to me working in Delaware and being home in DMV on the weekends. That way, once I drive up for work on Mondays, I am literally just pulling pre packed meals and snacks from the fridge (or drawer). No cooking (YUSSSS *pelvic thrust). No buying pots and pans or seasonings (thanks Mummy).  That's right I cook ONCE a week. DASSIT. It just makes life easier.

Also, for those of us trying to eat a little healthier, look a little (or a lot) more snatched, and/or save some coins--meal prepping is the way to go!

I am going to make an effort to share more of my meal prepping on the blog vs my personal IG. Hopefully it'll inspire you to give it a try (whatever your reason) or give you some ideas for what to eat.

My only request is let's make this interactive, I can get inspiration from you too! If you do any meal prepping at all, hashtag us in your pics using #sundayprepdayFFF ---and we will repost on the @fiercefitfoodie IG/FB accounts. It doesn't matter what day you prep!

Anways, lets get right into this week's prep.

For my morning snack this week I opted for the following:

Egg White Muffins

I used the whites of 8 eggs, seasoned with a little (really little) sea salt, fresh cracked black pepper and paprika. I also diced up some sweet white onions, red onions, orange and red bell pepper, fresh cilantro, and a small bit of shredded cheddar cheese which I added to the whisked egg whites. Also, I whisked this all in a large pyrex measuring cup so it would be easy to pour into the muffin tins. You can season however you like and add whatever ingredients you want to these.

Next I sprayed the muffin cavities with some olive oil (to prevent sticking), po'd up, then popped in a preheated oven at 375 degrees F for about 10 minutes. They do puff up in the oven, but collapse shortly after they are removed, as you can see above.

I have one each day as a part of a mid morning snack--good source of protein.

Last Friday while doing my monthly trip to Trader Joes for my Chickenless Crispy Tenders (I usually buy about 8 bags at a time so I don't need to go there frequently), I came across these all natural flavored/seasoned chicken sausages---thought they sounded pretty good and were worth a try!

Trader Joe's Chicken Sausage

This week I used the spinach, fontina & roasted garlic sausage for the other half of my morning snack.

Spinach, Fontina, & Roasted Garlic Chicken Sausage

Then in a hot pan I added about a tablespoon of coconut oil and a tablespoon of fresh chopped garlic which I let brown for a minute or two. I love garlic. And onions. And peppers. To that lightly browned garlic I added two strips of diced smoked applewood bacon and my diced chicken sausage. Let me say, I really don't like pork bacon. But a certain someone (*cough Jay) baked some amazing looking chocolate cupcakes with bacon on top that LOOKED like something yummy to eat. So enter my taste for it. Listen ya'll, I foolishly took one whiff of that bag and wanted to hurl. I hate the way bacon smells. UGH. (it did taste good with this sausage though)

Cooking spinach chicken sausage

Okay, so once the bacon and sausage had cooked and browned to my satisfaction, I added some thinly sliced sweet onions, red onions, and yellow and red bell peppers. I added those at the end because I wanted them to retain their 'bite' but not be completely raw. So 1-2 minutes and I pulled the pan off the heat. Entire dish done in about 5 minutes. I have some of this with one egg white muffin and a cup of hot tea (usually earl grey or green, plain) every morning around 10.

For an afternoon snack I made some of those chickenless crispy tenders I mentioned by placing them on a baking sheet with a bit of Old Bay seasoning and popped in the oven for about 20-25 minutes or until crispy. **Not pictured.

Dinner this week was really a stir fry with hodge podge of things I didn't want to go bad that were in the fridge. *Kanye Shrug. It 'be' like that sometimes.

Chicken tenderloins
I took these chicken tenderloins (which I first cleaned with vinegar/lime juice, then salt water), cubed them, and seasoned with garlic, jerk seasoning, paprika, asian 5 spice, asian ginger spice, fresh cilantro, red pepper flakes, juice of half a lime, a little marinade, and a capful of rum. I let this marinate in the fridge for a few hours prior to cooking.

Stirfry

Once again in a hot pan I added some olive oil and a tablespoon of fresh garlic. Then I added some fresh chopped carrots, endives (some white veggie in the carrot family), and frozen broccoli & cauliflower. Let that cook a few minutes then I added some fresh kale and allowed that to cook down a bit. Then I added my sweet white onions, red onions, and red and yellow bell peppers---toward the end again so they would retain some 'bite'. Finally, I added some bok choy (yuuum). Bok choy cooks very quickly, so I after about 2-3 minutes I removed the pot from the fire and that's it! This literally takes anywhere from 10-15 minutes to make. This was for my household so in another pot I added a bit of coconut oil and sauteed my chicken from earlier, then added the stirfry veggies to it.

Portioned dinner for the week
